Jerky: This is good stuff! Eat it as it is or add it to noodles etc on a walk in hunt. Light weight to pack,
There's a million different flavours, I change it every time.
The base ingredients are the salt, vinegar & sugar.

I put all the ingredients in a vacuum bag, don't suck it just seal so you can rotate & massage it for 24-48hrs in the fridge. big bowl will work too.

3kg sliced Venison or meat!!! no fat
1/4 cup salt
1/4 cup ground black pepper
1/4 cup ground coriander
1 cup brown sugar.
1 cup brown or cider vinegar (brewed vinegar)

Leave it at that or add whatever takes your fancy, clean out the fridge!! garlic, ginger, soy BBQ Worchester sauce.

24-48hrs later

I dry mine in a smoker burning Banksia nuts at about 70c don't cook it.
You can use a dehydrator on low or just fly proof box with a light bulb for heat.

If I'm taking it hunting I dry it pretty hard " no moisture content"
At home I leave it a bit soft and keep it in the fridge.

It's great chopped up in an omelette
Or like I said before, it’s light weight, add it to one of those dehydrated noodle meals on a walk in
Pretty good with beer though.
Don't show your mates, you'll never get rid of them!!!
