Buying/Bedding Scope Base

I have just bought a Winchester 70 243. It will be for deer hunting, and longer range varmint rifle. I am wondering what the benefits of mounting 1 piece base are, and if they should be bedded? And what is the benefit of a picatinny rail over a dovetail mount? Thanks for your replies in advance.

Hi Will, I see you bought a copy of the long range rifle book about an hour or so after this post. I hope it helps answer your questions and shows how I set up bases.
